Giants can be a difficult foe if you're not prepared for them. Here's some easy ways for dealing with them.
Always try to trip giants. They can't do any dmg lying on the ground.
Always try to Otto's/hypno pattern/command/greater command/hold/or even charm them. This stops their dmg output.
Gang up on the ones that are immobilized. If you're fighting one and you see another close to you that is held, hammer him. You ALWAYS crit when they're held.
Dual wield Giant Stalker's knives.

Found in Gwylan's Stand, dropped by Suropox. Having 2 weapons that are +3 to hit, 1d4 +1 dmg +3d6 for greater giant bane... ouch.
Fire Giants are lawful. Anarchic burst weapons bypass the dmg reduction of fire giants and deal from 2d6-4d6 extra dmg to them.
Fire dmg for ice giants, ice dmg for fire.. easy enough.
