Easy way for w/me to stop monks: hammstring followed by max domination with blackout = easy killing.
 I taste like Nuclear Waste. Delicious.
Tasting like nuclear waste is a good thing - nothing bites me, nothing eats me, few things even touch me. I appreciate the solitude my harsh exterior brings. What Flavour Are You?

My warrior mesmer build usually looks something like this.
full glads armor.
swordsmanship 12 + 1 + 3
tactics 9 + 1
strength 9 + 1
rest in inspiration magic.
sever artery
gash
final thrust
frenzy
physical resistance
elemental resistance
healing signet
rez signet
stay in a frenzy as much as possible, if you start takeing damage, end frenzy with one of the resistances, depending on what type of damage you are taking.

1. Sever Artery
2. Gash or if you have Frustration, Distracting Blow
3. Conjure Phantasm
4. Illusion of Weakness, Signet of Clumsiness, Frusration
5. Dolyak Signet
6. Healing Signet
7. Warriors Endurance [Elite]
8. Resurrection Signet
Attributes:
Illusion Magic: 10
Strength: 13 (11+Major Rune)
Swordsmanship: 10 (9+Minor Rune)
Tactics: 9 (7+Helm+Minor Rune)
Info: Straight forward degen build. I suggest a dmg vs hexed foes mod for your sword ^^
Or, for the domination variety.
1. Sever Artery
2. Gash
3. Watstrel's Worry
4. Empathy
5. Dolyak Signet
6. Healing Signet
7. Warriors Endurance [E]
8. Resurrection Signet
Attributes:
Domination Magic: 10
Strength: 13 (11+Major Rune)
Swordsmanship: 10 (9+Minor Rune)
Tactics: 9 (7+Helm+Minor Rune)
Info: Degen with some damaging hexes. Easily spammable, once you take into consideration the use of Warrior's Endurance. ^^

The epidemic + VIM build is useless now, you're better off with W/N + VIM since its a single target skill now.
The Solo UW build you posted is also kinda slow, and well, fairly limited. I'd personally stick to VWK or other Warrior farming builds ^^
