I have noticed that the appearance of the moon has changed siginificantly on two occations that I was playing:
Can anyone explain to me what the difference is or give me a link to the lore behind why the moon changes this way?

It has to do with the Seven signs competition. The moon in the pic 1 is what is diplayed when Dawn wins the competiton. The moon in pic 2 is the normal moon during the competition pediod. The moon when Dusk wins looks like the one below.

Dont worry Ive been playing for some time and still have no idea about alot of the ingame features. And they are always adding new content so its understandable to be lost sometimes. See This page.
