A couple of updates for your collectors database:
The Elemental Essence Collector in House Deneith:
2 x polihed ore - I've only done it once and got 20 +1 Axiomatic Arrows
1 x elemental ingot - elemental bane weapons/ammo
The Intelligence Collector in House Phiarlan:
1 x Tome: History of the Houses - various boots, helms, belts and goggles
The Apparatus Collector in House Kundarak:
3 x ceramic bowls - scroll of fireball
The Beetle Collector in House Jorasco:

There most certainly are! As a fighter, I carry a wide selection of weapons and 2 or 3 suits of armor so I am as versatile as possible. I use ranged weapons on occasion to pull mobs or to take ones out that can be ranged at no risk to myself. But I hated giving up precious inventory space to ammunition. I solve that with a returning thrown weapon.
This is simply a throwing dagger, axe, dart or shuriken that when thrown, magically reappears in your inventory. Essentially, unlimited ammo!
The down side is that you can't buy ammo from the brokers. Therefore you must find these little gems yourself. I've been finding them in barrels in Threnal East and West. +3 and +4 ones which are very nice. You can also get some from collectors quests such as the Elemental Essence collector in House Deneith and (less frequently) the Morbid Curios collector in The Marketplace.

Ruddy fungus, sanguine moths have been stealth removed from the game. I came into a ton more bank space after the patch. I don't know why I was keeping it, but you never know.
Blessed candles, and silver bowls still exist.
