Ok, now that my auction is over.... how do I look to see who won? Is the auction just "POOF!", gone? Additionally, can I remove unrealistic bids placed by players who have no intent on paying, just screwing up my auction?

You can go look to selling profile in auction and see who have put the last bid , after send a pm to high bidder for meeting somwhere .

The difference between the auctions here and real auctions is that real auctions have a system to prevent or discourage people from placing unrealistic bids. For example on ebay if you place a bid that's unrealistically high then there are consequences if you dont pay..here there are no consequences for either the auctioneer (right word?) or the bidders if they fail to abide by the rules and etiquette of auctions.
