I've heard people say that I can change my proffession in a place called "Command Post" but I cant find where that is...even wiki isnt helpful.
Does anyone know where it is?

If you have Sunspear Sanctuary just hold alt and look for the "Command Post" zone sign.

The Command Post can accessed while inside the Sunspear Sanctuary Location. I think it is the only way to get to the Command Post.

Also the Proffesion Changer is not in the Command Post at first. You have to do some quests to "unlock" him in the command post. Don't remember the names of them but just keep doing the quests that you get from the NPC in there and all the NPC's will show up.

I tried going to the temple of Balth at first to try changing my Dervish prof, i was told then that you had to be ascended or Closer to the Stars to change prof, so i spent an hour or two going through Cantha to be made Closer to the Stars and changed my prof at Senjis, then i found the Sunspear prof changer half an hour later..... Still, at least i dont have to do it again later.
