Personally, my monk never uses his secondary profession. But if you had to choose (which you do) I'd pick Mesmer.

I hardly ever use the secondary for a Monk. But if I do I normally go with Mesmer or Necro for energy management.

For healing and prot mesmer is the most common answer, but ele can work real well too.
Most of the other professions can be used for different thins if you like switching it up from time to time.

Only thing I don't like about channeling is that yo have to be close to foes for it to work. As a monk I am very concious of making sure I am nowhere near the foes so I can stay alive and not get killed. Nothing is worse than a dead monk in the middle of a fight. (unless it is a dead MM that just unleashed all of its minions on you.)

I'll say mesmer, Why:
Great low cost fast cast hex removing
Energy management such as channeling and hex removers...
And HERE is my best GW video so far...

I play mesmer for a WoH monk and some other builds, check Guildwiki for some good builds.

Mesmer is definatly the most commom but there are many other builds out there.
Channeling is more of an HA skill when you do altar maps there are generally lots of enemies around to trigger the effect.
As said above ele is also a good secondary.
I have also seen some Mo/A builds using return.

Order of Blood is nice if you can handle the 20% sacrifice of health.

It seems like monks typically use a very limited number of skills from various secondary professions. So it's easy to unlock the secondaries later in the game, and then take the one or two usefull skills. Mesmers however have more potential skills that might be useful to a monk than other classes, which in a way makes it the ideal choice.
I made my first PvE monk a couple days ago. I was going to go mesmer, but I went paragon. I still think mesmer is a technically better decision, but I just wanted paragon for the fun on it. Who knows, maybe there will be many good motivation/command skills, or maybe there will just be a couple. In the early game, the signet that heals ally and yourself is proving to be a very powerful heal. Time will tell how goot the Mo/P proves to be. For know it's fun though.

Mesmer is best for energy management
But, if you're not doing PvP, you most likely won't use your secondary

I also love bringing res sig in all forms of PvP as a Mo (most of the time)... so I'm not completely conventional.

Yeah, I hear you. But playing PvE like you would play PvP gives it a much more exciting feel to it IMO.
