Obsidian Flesh. It's an Earth Magic elite spell that temporarily prevents enemies from targeting the caster with spells as well as providing a minor armor bonus, thus preventing the vast majority of damage in the Domain of Anguish.
An OF tank, then, is someone with a build designed to take many hits without dying that also includes Obsidian Flesh. Most OF tanks are W/E characters who take 12 Earth Magic and high Tactics and Strength along with block% Stances from the Tactics line, Obsidian Flesh, and Armor of Earth with other skills that improve their durability.
