n00b question and all, but once you have picked your primary professions, can you change them at all or are you stuck with what you got?

You can change them. If you go to your Skills Pane('K') and select the tradeskill you want to drop an icon will show up to the right of that skill. Click that to unlearn it. Note that when you do this you will lose all skill points in it and any recipe you have learned so if you want it back you will have to start all over.

*nods* I did that on my Warlock when I dropped Blacksmith in favor of Tailoring.

A warlock blacksmith... interesting concept...
I was thinkngi more twaords my lil troll, bomb making isnt exactly 'troll like' in my eyes so i was thinknig of changing it but hey
