I've seen lots of monks in GvG with swords and shields instead of normal monk staffs/wands. Is there some advantage to this? And if there is, can someone tell me some ideal stats for a sword/shield wielding monk please.

Swords/Shields are the meta because you can get more advantages with them. Here's what I run.
____ Swords of Fortitude
+5e
+30 HP
Shield:
Armor 16 (If you can get a Q7 it'd be ideal)
HP+30
Armor+ 10 against piercing damage
Make an identical shield for slashing damage.

I can see lots of reasons.....with good energy management, the extra +12 energy from the offhand isnt really needed.
With a shield, even without meeting the requirement, they will have +8 armor, and possibly some damage reduction(-5 20% chance, or -2 while enchanted, for a boon prot or something). They can also even have +armor vs a specific type, possibly with mulitple shields for each damage type...that way they can take less damage when a warrior is chasing them around.

Firstly you need to realise that decent PvP monks run with a lot of equipment, depening on their play styles of course. Generally they will have a shield with +10 armour versus the common (of not all) types of damage (slashing, fire, piercing etc), a selection of focus/wands with +5e +15-1e etc, and usually caster weps with +5e +20% and +5e +30hp, plus maybe any staves and wands they feel they need.
The advantage of a shield +wep combo gives the caster what we call a low energy set usually putting them on energy pool of around 40 or so. They gain the armour bonus from the shield they have equiped, which they most likely change once they know what they are about to face, of +8 armour standard from the shield, and +10 from the specific damage type. This gives them an extra 18 armour total against most of their damage.
As the shield doesn't provide any energy, it can be used to switch down to when a monks energy pool is getting back up to full, or when he is taking energy penalties from enemy spells etc such as Energy Surge. You cannot lose energy below 0, by you can effectively gain energy by swapping to a higher-energy set, so when taking energy penalties the monk will switch to a lower set to minimise losses, and then switch back to his normal set to cast. Add to this then the use of negative energy sets, with -5e weapons etc and they can really ignore energy denial if used effectively.

surprisingly it did, but wont it cost lost of money to get all those mods and shield and stuff (not using a PvP char to just create them)

Not really, you can get green items to cover parts of it. Like the sword. Here's what I usually run on a prot monk:
Swap 1:
Sword/Axe/Spear
+5e
+30 HP
Shield
+30
+10 vs slashing
Swap 2:
Sword/Spear/Axe
+5e
+20% enchants
Shield
+30
+10 vs piercing
Swap 3:
Wand
+15e -1 regen
(other mod)
Focus
+15e -1 regen
(other mod)
Swap 4:
Sword/Axe/Spear
+15%-5e
+30 HP
Focus (That you don't meet the req of)
I forgot the exact mods, just put stuff on it that takes away the most energy and a +30.
