As far as Im aware there are no ways to remove items that you have added the HoM. Once you click the "Add to Monument" button thats basically it.
Perhaps in a future update they may have a 'hide' certain additions but not too sure since these will be unlocks to a corresponding GW2 thingy-er-other.
I'm also wondering what you think constitutes a "noobish" or "ugly" armor set since you can only add 10-15k sets. You must have bought it because it looked 'cool' at that time so don't let anyone tell you otherwise. It was your decision to purchase that armor so stick to it. If your guild is giving you grief about your HoM's unlocks then just don't invite anyone in to see them. :P
Edit** There is a way to organize the items so that something doesn't show up (ie titles). This may be costly for your particular situation since you would need to buy alot of armor sets just to shuffle through and hide the one you don't want to show.

Just leave it there. >.> There is no way to remove something from the Monument once ht has been added. So.. the only way to remove it, is to buy 5 new armor sets and add them. xD

Redye it. The dye of the armor on the Monuments reflects teh dye you are currently wearing.
