id recomend blacksmithing and mining. its gonna be useless early game but when u hit end game it has great swords and maces u can make. the best rogues iv seen use 2x of the maces which cause haste rating(faster attack speed) and also hit very hard. However, if you are willing 2 retrain your professions end game to blacksmith/mining then id roll skinning/leatherworking fr the time being.

i have engineering and mining, i have the epic goggles and they are kick ass, but it all depends on what you want to do. if you want to make gold, then do skinning with herb/mining, if you want to have good BoP gear then do Skinning and Leather Working, if you want good weapons the do Blacksmithing and Mining, if you want extra buffs, get Alchemy and Herb, and if you just want to make cool gadgets and stuff, get engineering and mining. there is also jewel crafting, but you need to have BC for it, don't know if you have it or not, but if you do you could consider that also, though it can be expensive just like enchanting is.
If i had a choice to do my professions over again, i think i would do Skinning and Mining for the Gold, you can always get drops for gear and going deep into a certain prof for a few items seems silly imo when you could be making thousands of gold, especially when you get to nagrand, you'll be skinning non stop there.

My fiance is engineering/mining too and LOVES it. I have a little warlock engineer gnome and I must admit having that exploding sheep is good times!
