if i have 2 hero handbooks in inventory, one having the quest X and one not, if im doing this quest, this quest is added to the book without it?
but if i have one in inventory and one in chest? i think if a book is in chest nothing happen, right?

If you complete a quest with a handbook in your inventory that has the quest already written in it, and another without the quest written in it, the second (empty slot) handbook will have the corresponding page filled in.
If you complete a quest with a handbook in your inventory and one in storage, only the handbook in your inventory will have a page filled in for the quest. To have the storage handbook filled in you must repeat the quest with the book in your inventory.
Remember, that completing a quest will not fill in both handbooks if both are missing the corresponding page; only one book will be filled in.

But if i dont have, for example, the quest Against the char activated in my quest log (with scrying poll or from a NPC)and im joining a group who is doing this quest, this ill be added to my hero handbook?

No, it will not. You must have the quest active for the handbook page to be filled in upon the group's completion of the quest.
