I just reactivated my old account and made myself a hunter, chose skinning/leatherworking as my professions but have run into a road block, I'm level 18 atm (only been 36 hours or so, I'm workin on it) and my skills won't go over 100 dispite having a listed cap of 150. I assume I need to hit 20 or 25 to go higher but it's kinda frustrating that there doesn't seem to be any mention of it anywhere. Anyone know all the level requirements for leveling professions? It would be greatly appreciated.

Did you make sure the leatherworking item you are trying to make is at least yellow or Orange to you? If its green you will hardly ever get a skill up, yellow most of the time, and orange always.(the name of the item you are making.) If your listed skill on your charcter sheet is 150 then it should go over 100 unless you are overlooking something.

If you don't have any patterns that are showing yellow or orange in your leatherworking patterns list, you probably need to do the circuit of towns and cities and hit the trainers.
You should be cranking out Dark Leather boots right now to level. It's a good bang for your buck as far at materials/level and can be learned at any trainer I believe. That will get you by until you can start making the Hillman's Cloak(Also available from the trainer). Both of those patterns are very easy on the materials and stay orange and yellow to get you through 100-170 in leatherworking.
Make sure that you stop making things when you hit 150, or have already trained the journeyman level so that you can still get skill level points.
There are also a lot of the drop patterns that you can pick up on the AH cheap. But I find that the best leveling patterns in the lowbie range were coming from the trainers(just power leveled my Shaman through leatherworking).

No your main level shouldn't matter at all.
