I've been thinking about working on getting one of those nice armour sets that you see people wearing around Ironforge.
I'm a one handed weapon / sheild warrior speced for protection.
I like the look of the grand marshall's set. What would you guys suggest?

There will be quite a bit of variance in the Tanking gear for an all round effective Prot Warrior. Our class leading Tank has three basic sets of armor that he works with based on the boss fights and team makup:
Max Avoidance
Max Defense
Max Threat
Now keep in mind, there are common pieces for each set that he uses as his base gear. So it's not like you have to have three complete sets, just some key pieces to swap out for certain situations.
For example, I run with this guy a lot, and I'm a high crit Destruction Warlock. So whenever possible he wears his max threat gear for the heroic 5 mans and such. With a solid healer running behind him he can run with less avoidance and defense.
Where will you be aquiring your gear? PvP or from instances and raids? Since you are a Prot Warrior, I don't see any problems with you getting work. They atill aren't in overabundance on any server that I can tell.
Really, the armory is your best friend. You can look yourself up and use the "Find an Upgrade" feature.
Your first priority is to get your defense up to approximately 515 to make yourself "uncrushable". A Warrior can probably give you the exact figure, but I know that it's a little over 500 Defense to achieve the uncrushable stats.
I do recomend that you get your rep up with the factions that get you into Heroics so you can start farming badges for badge gear. You can get a couple key pieces with badges and not have to count on the fickle fate of instance drops. This will also allow you to farm the instances that have gear you cannot purchase more often for your drops.

The only way to get tanking gear is to tank instances. Since bliz has made it ez mode for casual players to acquire gear through badge vendors the best way to go about it would be to start off in heroics, then to kara and just farm badges. You'll pick up some decent tanking gear along the way. I'm the main tank and raid leader of my guild that is on it's second week of killing Illidan and I was still wearing my tanking chest off of Nightbane when we got him down.
The first and most important thing to aim for is becoming uncritable which is aquired at 490 defense. After that you need to raise your avoidance, which consists of block/dodge/parry, to a combined 25% so that when you shield block you will be uncrushable. Note that with faster swinging mobs you will still be crushed as your shield block charges will run out before your CD is up. An excellent example of a crushing boss is Prince in Kara. He swing so fast that it's impossible to keep your avoidance at 115%. If you block you will not be crushed.
To deal with crushing blows you stack stamina in every slot available. Stam, stam and more stam. I think I'm sitting at 18k HP unbuffed right now. I'll try and get a link up to my toon so you can see the types of chants to get and what type of spec to rock with.
