I just started the Ouroboros missions where you can select your old missions. I noticed some had stars by them that said 'completed'. But it didn't make sense to me because,for example, the missions near the contact Flux (from the Hollows) didn't have this star and I know I completed all of his missions. Any help is appreciated.

You had to have completed the entire arc as yourself. You could have run someone else's missions.

Bingo. If you have a souvenier from a story arc, that arc should be starred in the Pillar. A lot of folks will be dinged by this little quirk since they ran content before being able to complete your mish when you ran your teammates exact mish didn't find its way to Paragon till recently.
