What are the differences between the two? Will you be able to do all the same things in PvP as PvE? Obviously you can't PvP on a PvE server, so I guess what I'm getting at is which server will you be playing on and why? I really am not sure of the differences and positive and negatives of each.
Even if anyone has a link to something with more info on each, that would help me out a bunch. Thanks :)

I'm generally not much of a PVPer, so I'll be mainly on PvE.
I might give PVP a swing though, to see what it's like. The FFA Gankfest we saw during the Open Beta probably wasn't the intended PVP.
Have not read up on it though, see first line. What I did gather is that on the PVP server, high level gathering (goods for crafting and Player Made Cities) resources will be contested.
I.e. you want to build a kick-ass player-city, better bring along some friends then...
So, unlike with Guild Wars, PVP actually ahs a meaning, or better said, a purpose.
MMORPG (Roleplaying): Mostly Men Online Role-Playing Girls
MMORPG (Acheivement): Miserable Malcontents Online Rehashing Past Glories
MMORPG (PvP): Macho Men Obviously Really Prefer Griefing
MMORPG (itemization): Misers May Obfuscate Recently Purchased Gold
MMORPG (Social): Virtual Worlds with Virtual Wealth and achievements, but with Real People with Real Feelings.

Well, the gank fest you saw... was the beta, most people it seems only PvP when you attack them, or to defend someone else getting ganked it seems. And with stealth etc, its pretty hard to get ganked anyways, run far enough, stealth, and wait for them to stop trying to find you XD
But if your going to roll on a PvP server, do NOT go any of the mage classes because they can all be 1-2 shotted, ranger also starts to lose power around 50-60 from what I hear.
Ofc... this is not at 80 and I imagen that the game was balanced for PvP at 80.

Maybe I am completely wrong here, but I thought there are PvP-able areas in PvE as well. On a PvP server you can be attacked everywhere except in town. On PvE you have to go to specific areas.

Yup, you can have bar brawls if I'm not mistaken. it's a PVP minigame also lovingly named Duelling in other games. For the True PVPer consenting (i.e. usually equally matched) PVP is the pits. They much prefer camping spawn- and load points for lowbies :-)
Seriously, PVP and duelling are different things. The situation you're describing is the FFA PVP that happened during Open Beta, everything but the towns is open season. I'm assuming this is not how it's implemented because, A) Funcom said actual PVP would not be that way and B) a lot of maps open for PVP that way really aren't suited for it.
