i have got granite armor and im wondering if i should respec out some of the other stone armor

This is actually the norm for most people that get to Granite Armor. They no longer see a need for the other Armors and look to add more useful Powers. It is not going to gimp your build if you respec out of the other Armors. You are going to run into a situation were you might wish you had them though.
Just heavily slot Granite with Defense Buffs and Damage Resist and you should be fine.

Or just Res and End. That is, until you get the appropriate Hami-Os. Which are becoming harder and harder to find these days. . .
