I made a warrior/monk AKA the newb tank. warrior fights monk heals.
I also made a monk elementalist. Monk still heals, but if i get nice spells like ward against harm and stuff, i should theoreticaly be able to tank...but as my monk is only 11 so the most i do is the ocasional nuke.

If you choose Monk/Elementist you do not get energy storage. You would have to be an Elementist/Monk for that to work. That is an attribute that is only accessiable to an elementist profession (primary).
As far as what you choose, anything can work well with a monk as your primary profession.
If you choose elementist go with more of a defensive build to defend yourself while you heal others - Earth or Water magic.
You could choose Mesmer and be a very powerful healer. Go with the mesmers inspiration powers. If you are looking more for a healer character I would choose this over an elementist (if you take Monk as your primary profession)
Necromancer is a good combination if played right can be a very strong character. Combine the necromancers death magic with the monks smiting powers.
Ranger and Warrior are solid professions.
Anything can work with a monk!
But...
Unless you want to mainly be a healer, I would suggest making this your secondary profession. Warrior/Monk is a great profession combination. You have the armor, warrior skills, and the healing powers. Elementist/Monk are very powerful healers because of enegery storage. But, you only get this if you have elementist as your first profession. I would say focus on water magic if you go that way. Slightly offensive, yet mostly defensive magic. Or go with earth magic and be almost completely defensive. With this combination or any combination with a monk you are going to be a target for anyone you play aganist so it is a good idea to have some defensive powers.

hmm for a monk.. depends on what type of monk you want to be.. IF you want to use monk skills from the divine prayers column then you would want monk first..
Mo/Me could add some dps interuption or mana recovery
Mo/E add some dps self/group wards and def
Mo/N blood magic for some of the wells nice group regen or can do dps or detrimential spells to aid party - high energy for later...
Mo/W great self def (remember you have no armor = no tanky)
Mo/R pet/interuption/utility (spirits - traps)
you said energy storage and princess is correct you would have to be a E/Mo.. I have one and it works fine the only downside is no divine prayers (each point of divine prayers you heal an addition 3 when eva you cast a monk spell on a target ally)..
granted im sure theres alot I missed but this is just a general overview of the monk/healin prof..

Monk/ mesmer is a very good mix. The mesmer spells help recharge your engery which is in short supply if you are a monk. I have found this a very successful combo.

I have a mo/me also. Basically use him as a prot monk for smite runs in underworld with a tank and ele. He also goes full prot/smite for desert and snake dance farming runs. They work great if u don't run into anything with shatter enchantment. He's done the necro path quest and the ele path quests in the desert, but i havent dabbled too much in these skill sets for him yet.
So basically, he has the other skill sets for mesmer, but I find for how I play him, he only needs monk skills
Hope this helps.

I have a monk build and I am a monk/ele because I like divine favor better than energy storage. For the elementalist part I would choose earth as a type for him or her because your not really attacking, your healing or protecting most of the time. For your skills as an earth ele I would use wards and + armor skills. That is a great build monk/earth ele.
